This is one of my absolute favourite go to snacks lately. They are easy, quick, affordable, always readily available, sweet and delicious . Now when I say they’re easy to make, I mean they are EASY to make!
Not only are they delicious but they are filled with nutrients! Loaded with fibre to keep your digestive system happy and regular, plus vitamin A, C (antioxidant overload), B vitamins and magnesium (great for your nervous system, especially if you are feeling stressed or overwhelmed). These nutrients help to maintain healthy blood sugar levels, support your immune system as well as support healthy eye and skin health. Purple sweet potatoes actually contain a higher amount of antioxidants and phytonutrients, so it’s actually a great excuse to add them into your regular weekly meal planning 😉
I persoanlly prefer the purple sweet potatoes because they are more crunchy, but you can use which ever one you prefer.
All you need to do is:
- Give your sweet potato a good wash ( I always keep the skin on and because of this I prefer to buy organic where possible)
- Chop it into wedges
- Place them on a baking tray with a drizzle of olive oil
- Season with sea salt and cayenne pepper, or cinnamon, which ever flavour you prefer 🙂
- Bake in the oven on 180 degrees for about 15-20 minutes, making sure to keen an eye on them
Serve as a side dish or simply have them as a snack with some dip of your choice, or just on their own because they are delicious no matter how you have them 🙂
